Gigabit ethernet traffic (RJ45-jack) means in real world ~945 Mbit/s. If you go with fibre, the SFP-slot is capable of 2500 MBit.
Maximum measured speed with Turris Omnia with NAT turned on is 975 MBit (for this you have to use fibre - see above). Source: True 1Gbit NAT WAN?
